rustic apple cake

We had ambrosia apples this week. They are the best tasting apples I have ever tasted; and I have tried a lot of varieties of apples.

They were so good in fact, I thought they deserved to be cake!

Rustic Apple Cake (adapted from honey And jam)
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter or margarine
1/2 cup sugar
2 eggs
1 teaspoon pure vanilla extract
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 apple, peeled, cored, and cut into 16 pieces
2 tablespoons of turbinado sugar

In my kitchenaid, I creamed the margarine and sugar for 2 minutes. Then I added the eggs one at a time. Next I added the vanilla, nutmeg and cinnamon. Once that was well blended I added the flour, baking powder and salt.
Mix until just blended and then spoon into a greased cake pan. I also used a round of parchment in the pan so it would come up easily. This batter is very thick- but try to spread it evenly. Then arrange the apple slices so that each piece of cake will get 3 slices. Sprinkle the turbinado sugar on top.
Bake at 350 degrees for 40 minutes or until light brown and a toothpick comes out clean.
The kids had theirs with whipped cream, but I liked it just as it is. xoxo

Sunday Bonnet


I got the idea for this hat from the woman who sat in front of me at church a few weeks ago. This isn't an exact copy, but it is my spin on her groovy church hat.

Pattern:
Cast on 52 stitches (must an even number- but use whatever you need to be big enough to fit around your head. The k2p2 pattern will make it stretch so it doesn't have to fit loosely) onto regular straight needles. I used 10mms.
For the first 10 rows K2 P2 all the way across using one color yarn.
For the next 10 rows, add another color along with the first and knit both yarns across. Then purl back. This is the stockinette stitch.
The next 10 rows- go back to one color and continue with stockinette
The next 10 rows- add on your other color and stockinette
The next 10 rows- one color in stockinette
The next 10 rows- two colors in stockinette.
Bind off in knit.
Sew up the seam to make a tube shape. Then the top of the hat is sewn in 4 even sections (see picture).

This hat is super soft and comfy.

I am inspired!

My sister, Megan, and her lovely new blog Dirty Dishes has inspired me to start blogging again. I used to regularly write on a blog and tried again a year ago at A breastfeeding mom's journal but with life and.. well... with Facebook... I wasn't doing a very good job. I'm going to try and keep record here of food and knitting with some personal life sprinkled in and I'm sure a pretty large dash of my kidlets.
